
Tilapia in a Burrito
Tilapia is one of my favorite fishes. It’s a light fish, it’s delicate, and it can be fried up and turned into fish tacos. What more can one fish do?
Of course, some will argue that a fish burrito sounds even better than a fish taco. Try this recipe and see if they’re right.
You will need:
- 1 can whole pinto beans, cooked
- 1 jalapeno, seeds removed and chopped
- 1 tablespoon chili powder
- 8 tilapia filets
- Salt and pepper
- 2 packets of your favorite fish fry batter and ingredients for them
- Oil for frying
- 8 large tortillas
- 2 cups shredded cheddar cheese
- Spicy mayo
- In a saucepan, combine the pinto beans , jalapeno, and chili powder. Bring to a simmer over low heat.
- Next, pat the tilapia dry and cover liberally with salt and pepper.
- Follow the instructions on the fish batter and coat the fish.
- Bring the oil to temp according to the batter instructions (425 otherwise).
- Fry the fish.
- When all the fish is fried, chop the fried filets into 6-8 pieces.
- Microwave the tortillas for 30 seconds.
- Layout a tortilla and add two healthy tablespoons of beans, 1/8 of the fish, some cheese and spicy mayo to taste.
- Roll the burrito and repeat with each tortilla.
