Avocado Egg Rolls
That’s right. Because avocado wasn’t good enough by itself, I had to wrap it and fry it. Awww yeah. It’s so unResolution Month time now!
Making Avocado Egg Rolls for unResolution Month
Technically, these could be called Guacamole egg rolls, at least the way I make them. I like to get the avocado mashed up fairly well so that it has the consistency of guacamole. You could use strips of avocado if you prefer the texture. I mean, knock yourself out, it’s unResolution month!
Now, to flavor these bad boys, you are going to use a lot of the spices you’d find in guacamole, but not all of them. And certainly not all the vegetables. Who need nutrients in unResolution Month anyway?
Lastly, to dip, you can use last night’s avocado ranch dip or the wasabi ranch listed below.
You will need:
- 2 Avocados
- 1 tbsp garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- Juice of 1 lime
- Egg roll wraps
- 1 egg
- Oil for frying
- 1 bottle of ranch dressing
- 1 tbsp wasabi paste
- 1 teaspoon sugar
Halve the avocados and remove the pit. Then use a knife to make slits into the avocado flesh, being careful not to cut the skin. Use a spoon to separate the flesh from the skin. Put the avocado into a bowl with the garlic powder, salt, pepper, and the lime juice. Use a potato masher or fork to mash the avocado.
Beat the egg with a tablespoon of water to make an egg wash.
Lay out egg roll wraps and brush all four sides with egg wash. Put two tablespoons of filling on each wrap and roll like a burrito.
Bring the oil to 350 degree temperature or let it get hot over medium-high heat. Fry the egg rolls until golden brown.
Finally, make the dipping sauce by mixing the ranch, wasabi, and the sugar. Mix well, serve with the egg rolls and enjoy!
