The Airport – The Ride For Family Homelessness Day 7

Okay, so I said I would blog one day for everyday Dancing Deer CEO Trish Karter rode her bike. That includes as I sit in the terminal and type this on my iPhone. (KC internet appears to have a cost associated with it. 🙁 )

The good news? I have a recipe!

Ganache Dipped Shortbread Cookies

Okay, so this is hardly the most inventive recipe, but I want to save the good stuff for when I have two hands to type.

Making Ganache Dipped Shortbread Cookies

You will need:

  • 1 package shortbread cookies
  • 3/4 cup heavy cream
  • 2 tablespoons butter
  • 9 ounces dark chocolate chips
  • (optional) shredded coconut, crumbled Oreos, or cracked peanuts

Take the cookies out of the package.

In a sauce pan, add the heavy cream and the butter. Bring to a boil.

The minute the cream is boiling, pour into a heat safe bowl containing the chocolate chips. Stir to melt the chocolate.

Dip the cookies in the chocolate and sprinkle the coconut, peanuts, or Oreos on the chocolate.

Put in the refrigerator overnight to set.

Serve with milk and enjoy!
